GF recipe: spinach, dates and pine nuts. Bon appétit !

Cooking slow, taking care of each one, missing the rest of the family, staying at home… We hope you and your loved ones are safe and doing well. These are hard days and we keep us doing as much as we can staying at home.

Two days ago, I cooked the spinach, dates and pine nuts recipe from my mom. My parents are at home in the South of Spain and I do miss them. Cooking sometimes is like reading or writing. The sense of smell is closely linked with memory. I hope you’ll like the recipe as much as all the family enjoys it.

SPINACH, DATES AND PINE NUTS

INGREDIENTS

  • 250g fresh spinach

  • 4-6 teaspoons toasted pine nuts

  • 4 dates

  • 3 eggs

  • 1 teaspoon minced garlic

  • 3 teaspoon olive oil

  • A pinch of selt

INSTRUCTIONS

  • Rinse the spinach leaves. Clean them with water. Place the spinach leaves in a microwave-safe bowl (once they are rinsed) and cook them 5 minutes in the microwave with a half glass of water.

  • In the meanwhile, toast the pine nuts with a teaspoon of olive oil in a frying pan.

  • Once the spinach leaves are cooked, take them from the microwave and drain them. Put two teaspoons of olive oil to another pan, chop the garlic, cook it and. Cook everything during 3-5 minutes.

  • Chop dates finely and add them to the mix with the pine nuts. Cook during 1-2 minutes, toss everything and finally, add 3 eggs. Continue tossing until the eggs are cooked.

  • Serve immediately and enjoy!
