Gluten free recipe: Chickpea salad with edible flowers

We are happy to share the recipe of a 10-minute healthy salad with chickpeas that we have been cooking these last weeks several times as it is already quite hot here. We really like it, specially because of the flowers flavour mixed with onions and chickpeas. We hope you’ll enjoy as much as we do.

Regarding the flowers petals, please, note that, of course, we suggest to consume edible flowers, organic and non-sprayed ones as it is very important not to ingest pesticides. We plant several type of edible flowers in the garden and then we dry them for a while. For this recipe, we have used a mix of lavender and marigold petals. You could also look for already mixed petals from your bio market.

CHICKPEA SALAD WITH EDIBLE FLOWERS RECIPE

INGREDIENTS

  • 500 grams of chickpeas

  • Handful of lavender and marigold dry and organic petals (or other kind of edible flowers)

  • Half red onion

  • 1 lemon juice

  • 1-2 tablespoons of olive oil

  • A pinch of salt and pepper

  • Optional: an avocado cut into cubes or a handful of olives

INSTRUCTIONS

  1. Rinse the chickpeas. Clean them with water. Place them in a bowl.

  2. Chop the red onion. Add it to the chickpeas in the bowl.

  3. Add one lemon juice to the chickpeas, 1-2 tablespoons of olive oil and a pinch of salt and pepper.

  4. Mix everything and finish adding a handful of lavender and marigold dry and organic petals (or other edible flower you have chosen).

  5. Refrigerate at least one hour before serving.
